Basics - Five Day Course

For those who would like a good grounding in all the basic culinary techniques, along with menu planning and food presentation, this five-day course will set you off on the right foot.
 
Students will learn about soups and sauces, pastry and bread making, cakes and baking, as well as roasting, grilling and casseroling meat, fish and vegetables and preparing varied and delicious puddings.
 
The focus for each day will be to produce a light informal lunch with freshly baked bread, followed by a more formal three or four course dinner. All of which will leave friends and family in awe of your newly acquired skills.

I was lucky enough to attend one of Penny Lewis’ five day courses in March 2012, it has changed the way I will cook for the rest of my life. What an inspiring course it was. It was not just the cooking but the very helpful handy hints and recipes.

Being there for five days I covered the whole spectrum of dishes and methods, from bread making, dinner parties, healthy nourishing meals, great cakes and wonderful desserts. Penny was able to fit in particular things I wished to try but did not have the confidence to try at home such as souffles and sauces for fish dishes.

My family where amazed and delighted when I arrived home with a wonderful selection of my dishes, they particularly appreciated the Hot Cross buns, which I went on to make many more batches before and after Easter.

I cannot praise Penny enough, she is a wonderful patient teacher, truly inspirational. This course had to be the nearest thing to a religious experience I have ever had. I left the course feeling I could cook anything!

I would like to nominate Penny Lewis of the Culinary Cottage in Abergavenny South Wales for the best cookery school award. I have attended several courses with her in her delightful school and have been encouraged by Penny to try skills which I thought way beyond my capability.

Her teaching and guidance is excellent in that she is friendly but very constructive and encouraging! Penny has not only succeeded in making me a better and more enthusiastic cook but she has changed the way I feel about feeding my family and my approach to food.
I was a somewhat timid cook and now can look at a few lack lustre ingredients in my fridge and concoct a meal! Goodbye ready meals! I have Penny to thank for this,her Cookery School is simply the best!

I have never learnt to cook, as my husband is the cook in our family. Then, aged 70 I thought I should.. I knew of Penny Lewis through my daughter. She had cooked wonderful things for her at the New market sales. She has a wonderful reputation around Europe.

Penny started a Cookery School at her home, and I asked to go on her Beginners Course I was the only one on the course, as she could find nobody who knew as little as me!

We started at 9.0am and cooked through until 1pm. We ate a little of the many dishes we had made. I Slept until 4pm, Worked on until 8pm and the ate a little and thus bed.  Three wonderful days! Penny is a charismatic teacher, kind, patient, and I learnt so much and many delicious recipes.

My husband and I later did another Course with friends, and hugely enjoyed it, and all learnt many more marvelous recipes. Now, whenever I have a problem, I telephone Penny from around the world for advice, always kindly, and graciously given .

I have attended two of Penny’s courses at The Culinary Cottage and have recommended them to friends and family. Penny’s style is informal and very hands on. Penny herself is very knowledgeable and you can ask her any question you like on all aspects of food preparation, cooking and what equipment is best. No time is wasted on the courses at The Culinary cottage and the big bonus is that you get to eat what you cook and you can bring home some delicious food and recipes to share with your family and friends.
